Peeling shallots
I was peeling the shallots and remembered that someone recently told me that’s why they don’t use shallots, they hated peeling them. Their flavor is subtle but onion. They make other foods better. They’re a soft onion, a minor key in the onion family. My mother never cooked with them. They’re fancy. They’re expensive here....
